Ingredients
  

  • 6 cups seedless watermelon, cut into 1-inch cubes
  • 1 large English cucumber, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 red onion, thinly sliced
  • 1 handful fresh mint leaves, torn
  • 1 handful pitted black olives (optional)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lime juice
  • 1 tsp honey (optional)
  • 1 pinch flaky sea salt
  • 1 pinch freshly cracked black pepper

Method
 

  1. Cut the watermelon into bite-sized cubes and let it drain in a colander for a few minutes while preparing the remaining ingredients.
  2. Slice the English cucumber into half-moons or ribbons.
  3. Thinly slice the red onion. If desired, soak the slices in cold water for 10 minutes to mellow their flavor.
  4. In a large bowl, gently combine the watermelon, cucumber, and onion. Top with the crumbled feta and torn mint leaves.
  5. Whisk together the olive oil, lime juice, honey, sea salt, and black pepper in a small bowl.
  6. Drizzle the dressing over the salad just before serving and toss gently to avoid breaking the watermelon.
  7. Taste, adjust seasoning or lime juice if needed, and serve immediately while chilled.

Notes

Drain the watermelon briefly before assembling to reduce excess liquid. Dress the salad immediately before serving for the best texture. Substitute basil for mint if preferred, or use a plant-based feta for a vegan version. Optional black olives and a drizzle of balsamic glaze add extra flavor.
