- Season the chicken with salt and pepper.

- Add rice and toast for 1 minute.
- Pour in broth, pineapple juice, and water.
- Bring to a boil, then return chicken.
- Cover and cook on low for 15 minutes.
- Add pineapple chunks.
- Cover and cook 10 more minutes.
- Let rest for 5 minutes.
- Garnish and serve.
