  • 1 cup pancake mix

  • 1 large egg
  • 2 tablespoons pure maple syrup
  • ¼ teaspoon ground cinnamon

Method
 

  1. Mix the dry and wet ingredients together in a bowl until mostly smooth. Let the batter rest 3 to 5 minutes so the leavening activates.
  2. Fold the cooled crumbled sausage and shredded cheese into the batter gently with a spatula. Do not overmix.
  3. Heat a non-stick skillet over medium heat for 90 seconds, then add butter or cooking spray to coat the surface.
  4. Drop heaping tablespoons of batter onto the skillet. Cook 2 minutes until bubbles form, flip, cook 1 to 2 minutes more until deep golden. Work in batches.
  5. Rest finished bites on a paper towel-lined plate for 30 seconds. Serve warm with maple syrup or hot sauce.

✅ TIP 1 — Cool the sausage before adding it: Hot sausage can partially set the egg in the batter before the pan does. Let your cooked, crumbled sausage sit for 5 minutes before folding it in.
