- Shred or dice the cooked chicken. If using rotisserie chicken, pull the meat off and shred it with two forks or your hands.
- Dice the cucumber small, salt it lightly, and let it sit in a colander for about 5 minutes to drain, then pat dry. Finely chop the red onion (soak in cold water for 10 minutes first if you prefer a milder bite).
- In a large bowl, combine the Greek yogurt and tzatziki. Whisk in the lemon juice and olive oil until smooth and well combined.
- Add the chicken, drained cucumber, red onion, feta, and dill to the bowl. Fold gently with a spatula until everything is coated, being careful not to overmix.
- Taste and season with salt and pepper. Cover and refrigerate for at least 20 minutes before serving to let the flavors settle.
Notes
Salt and drain the diced cucumber for about 5 minutes before adding it in to prevent a watery salad. Rotisserie chicken works great for convenience, or use grilled or poached chicken breast. For a dairy-free version, substitute a dairy-free yogurt and tzatziki alternative. Store in an airtight container in the fridge for 3 to 4 days; the flavor improves after the first day. Not recommended for freezing, as the yogurt and cucumber don't thaw well.
